Thank you, for registering for our CCE Cattaraugus Egg-cellent short format classes on Preparing Eggs safely (especially hard boiling), safety when selling and handling Eggs in NY, Egg Coloring, Egg storage and any other topic we can think to cover through March 31, 2024.

In today's video you meet Tim Bigham. Tim works with the Farm Bureau of NY in the region which includes Cattaraugus County. Tim is also on the Board of Directors for Cornell Cooperative Extension of Cattaraugus and serves as our treasurer. The Farm Bureau represents local/regional farms and farmers by working with them to ensure that their interests are heard by county, local and state and federal government on issues that are important to our local agricultural communities. Tim also told us about an upcoming event, which is open to the public and supports scholarships given to FFA and 4-H youth for their community projects or trips they would like to take. Tim and our Executive Director, Kelly McDonald learn how to color Eggs with natural dyes made from purple cabbage and red beets. The step-by-step process is explained and demonstrated (video at top).

The egg colors are beautiful from the cabbage a beautiful pastel blue and a light mauve from the beets. Kelly used canned beets…would the colors be more vibrant from fresh? Probably!
